Italian Pot Roast (Stracotto)
Ingredients:
1.5 to 2 kg beef (e.g. roast or shoulder)
2 tablespoons olive oil
1 large onion, diced
2 carrots, diced
2 celery stalks, diced
3-4 garlic cloves, minced
1 cup red wine (dry)
1 cup beef broth
1 can (400 g) diced or passata tomatoes
2-3 sprigs fresh rosemary
2-3 leaves fresh sage (or 1 teaspoon dried sage)
2 bay leaves
Salt and pepper to taste
Optional: 1-2 tablespoons tomato paste for extra depth of flavor
