A classic Southern Potato Salad

Ingredients

  • 3 lbs russet or Yukon gold potatoes
  • 1 1/2 cups mayonnaise (Duke’s is traditional in the South)
  • 2 tbsp yellow mustard
  • 1/4 cup sweet pickle relish
  • 1/2 cup diced celery
  • 1/2 cup diced onion (white or yellow)
  • 4 large hard-boiled eggs, chopped (plus 1 sliced for garnish)
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1/2 tsp paprika (plus extra for garnish)
  • Salt and black pepper to taste
