Instructions
1. Prepare the Pork:
Take the pork loin out of the refrigerator about 20-30 minutes before cooking to let it come closer to room temperature. This promotes more even cooking.
Pat the pork loin completely dry with paper towels. This is crucial for getting a good sear.
2. Make the Rub & Season:
In a small bowl, mix together the salt, garlic powder, thyme, onion powder, black pepper, and paprika.
Drizzle the olive oil over the entire surface of the pork loin and rub it in evenly.
Sprinkle the dry rub mixture over all sides of the pork, pressing gently to make sure it adheres.
3. Air Frying:
Preheat your air fryer to 380°F (190°C) for 3-5 minutes if your model recommends it.
Place the seasoned pork loin in the air fryer basket, fat-side up if it has one.
Cook for 25-35 minutes, flipping the roast over halfway through the cooking time. Cooking time will vary based on the thickness and exact weight of your roast.
4. Check for Doneness:
The pork is done when the internal temperature reaches 145°F (63°C) in the thickest part of the meat. This is the most reliable method. Do not rely on time alone.
The exterior should be golden brown and slightly crispy.
5. Rest the Meat:
Once cooked, carefully remove the pork loin from the air fryer and transfer it to a cutting board.
Tent it loosely with foil and let it rest for 10 minutes. This is a non-negotiable step! Resting allows the juices to redistribute throughout the meat, ensuring it is moist and tender when you slice it.
6. Serve:
After resting, slice the pork loin into ½-inch thick medallions and serve immediately.
Helpful Tips & Variations
Weight Matters: For a larger roast (e.g., 3 lbs), you will need to increase the cooking time. Start checking the temperature at the 30-minute mark and add 5-10 minutes as needed.
Don’t Overcook: Pork loin is a very lean cut. Overcooking is the primary reason it turns out dry. Using a meat thermometer is the best way to prevent this.
Simple Gravy: While the pork rests, you can make a quick pan gravy. Add a little chicken or beef broth to the air fryer drawer (if it’s safe to do so with your model) to deglaze the drippings. Pour it into a small saucepan, bring to a simmer, and thicken with a cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp cold water).
Flavor Variations:
Sweet & Smoky: Use a BBQ dry rub instead of the herb mix.
Asian-Inspired: Marinate for 30 minutes in a mix of soy sauce, honey, minced garlic, and grated ginger before patting dry and applying oil and a simpler rub (just salt and pepper).
Mustard & Herb: Brush the pork with Dijon mustard before applying the dry rub.
What to Serve With Air Fryer Pork Loin
Vegetables: Air-fried broccoli, green beans, asparagus, or Brussels sprouts.
Potatoes: Mashed potatoes, air-fryer roasted potatoes, or a creamy potato gratin.
Apple Sauce: A classic pairing that never fails.
Salad: A simple arugula or garden salad with a vinaigrette.
