- In a mixing bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt.
- Slowly add the water while whisking until smooth. The batter should be slightly thin, enough to coat the back of a spoon.
- Dip your prepared ingredients (fish, chicken, shrimp, or veggies) into the batter.
- Fry immediately in hot oil (350–365°F / 175–185°C) until golden and crispy.
- Drain on paper towels and serve hot.
Tip: For extra crispiness, keep the batter cold and fry in small batches so the oil stays hot.
Storage Method
- Dry Mix: You can prepare the dry ingredients (flour, cornstarch, baking soda, baking powder, and salt) in advance and store them in an airtight container or jar. Keep it in a cool, dry place for up to 2 months.
- Prepared Batter: Once water is added, the batter should be used immediately for best crispiness. If you have leftovers, cover and refrigerate for up to 1 day, then whisk again before using. Keep in mind that the batter may lose some of its light texture after being stored.
