Crispy Batter Mix

  1. In a mixing bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt.
  2. Slowly add the water while whisking until smooth. The batter should be slightly thin, enough to coat the back of a spoon.
  3. Dip your prepared ingredients (fish, chicken, shrimp, or veggies) into the batter.
  4. Fry immediately in hot oil (350–365°F / 175–185°C) until golden and crispy.
  5. Drain on paper towels and serve hot.

Tip: For extra crispiness, keep the batter cold and fry in small batches so the oil stays hot.

Storage Method

  • Dry Mix: You can prepare the dry ingredients (flour, cornstarch, baking soda, baking powder, and salt) in advance and store them in an airtight container or jar. Keep it in a cool, dry place for up to 2 months.
  • Prepared Batter: Once water is added, the batter should be used immediately for best crispiness. If you have leftovers, cover and refrigerate for up to 1 day, then whisk again before using. Keep in mind that the batter may lose some of its light texture after being stored.
