In a saucepan over medium heat, combine the sugar and milk. Stir continuously until the sugar dissolves completely.
Add the butter and salt. Continue stirring gently.
Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook for about 30–40 minutes, stirring occasionally.
As the mixture thickens and reduces to about half its original volume, it will take on a creamy texture.
Remove from heat. Stir in vanilla extract, if using.
Let it cool completely. It will thicken more as it cools.
Store in a clean jar or airtight container in the refrigerator for up to a week.
