In this recipe, you won’t need egg whites, but only egg yolks, which will be pasteurized with a syrup made with water and sugar.
This mascarpone cream is excellent for filling cakes and pandoro (you can make a spectacular and delicious pandoro tree) but it is also amazing served in cups for a heavenly dessert.

4 egg yolks
1 sachet of vanilla
40 ml of water
