For the filling:

  • 2 tbsp olive oil

  • 1 small onion or shallot, finely chopped

  • 500 g mushrooms, cleaned and sliced

  • 150 g smoked ham (or bacon), diced

  • 2 tbsp butter

  • 2 tbsp flour

  • 360 ml warm milk (whole or semi-skimmed)

  • 50 g grated cheese (e.g., Emmental, Comté, Gruyère, or Parmesan)

  • 2 tbsp chopped fresh parsley

  • Salt & freshly ground black pepper

  • A pinch of nutmeg (optional)

For the pastry:

  • 1 sheet of puff pastry (300–350 g)

  • 1 egg yolk + 1 tsp water for brushing
