My boyfriend grew up in Kentucky so when came across this recipe looking for a bday treat I knew I had to try it.

  1. Preheat Oven
    Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the Dough
    In a large bowl, beat butter and powdered sugar until light and fluffy. Mix in vanilla. Add flour and salt gradually until combined, then stir in nuts.
  3. Shape Cookies
    Roll dough into 1-inch balls and place on the prepared baking sheet about 1 inch apart.
  4. Bake
    Bake for 12–15 minutes, or until bottoms are lightly golden (cookies should not brown on top).
  5. Roll in Sugar
    While still warm, roll cookies in powdered sugar. Place on a wire rack to cool, then roll again once cooled for a snowy coating.

Storage

  • Store in an airtight container at room temperature for up to 1 week.
  • Freeze baked cookies for up to 2 months. Thaw at room temperature and re-roll in powdered sugar if needed before serving.
