Method: The Creaming and Layering Technique

This method relies on creating a juicy bottom layer and a crumbly, streusel-like top layer that contrasts beautifully in texture.

Instructions:

1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
2. Create the Filling: In a large bowl, combine the frozen berries, granulated sugar, lemon zest, lemon juice, ⅓ cup flour, vanilla extract, and a pinch of salt. Gently toss until the berries are evenly coated. No need to thaw the berries; using them frozen prevents the bake from becoming too soupy.
3. Assemble the Base: Pour the berry mixture into the prepared baking dish, spreading it into an even layer.
4. Create the Topping: In the same bowl (no need to wash it!), combine the 1 ½ cups flour, rolled oats, brown sugar, cinnamon, and salt. Whisk to blend. Add the cold, cubed butter. Using a pastry cutter, your fingertips, or two forks, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized bits of butter remaining. This is key for a crisp, flaky texture.
5. Top and Bake: Sprinkle the oat topping evenly over the berry mixture. Do not press it down.
6. Bake to Perfection: Place the dish in the preheated oven and bake for 45-55 minutes, or until the filling is bubbly and the topping is a deep golden brown. The incredible “house-smell heaven” will let you know it’s getting close!
7. Rest and Serve: Remove from the oven and allow it to cool for at least 15-20 minutes before serving. This allows the filling to thicken slightly.
