Wow, this salad is so delicious it’s almost unnecessary, it’s addictive!

Ingredients:
(serves 4)

1 fresh cucumber

1 red pepper

1 yellow pepper

1 small red onion

200g cooked chicken or smoked tofu (optional)

150g feta cheese or mozzarella balls

2 handfuls of arugula or mixed salad

1/2 cup canned corn

2 tablespoons chopped parsley
Sauce:

3 tablespoons of natural yogurt

1 tablespoon mayonnaise

1 clove garlic, pressed with a press

1 teaspoon mustard

Salt and pepper to taste

A few drops of lemon juice
